GF Almond Cookies
Oven temp: 350 F
Ingredients
3 egg whites
1 c. sugar
1 tsp. almond extract
3 c. almond meal
1 1/2 tsp. cornstarch
Directions
1. Whip egg whites until foamy and gradually add the sugar and almond extract.
2. Continue beating for several minutes until stiff peaks form.
3. Fold in almond meal and cornstarch until well combined.
4. Drop generous tablespoon sized portions of cookie onto a parchment lined baking sheet.
5. Bake at 350 F for 15-20 minutes.
Chocolate Date Cake
Ingredients
1 c. sliced dates
1 1/4 c. boiling water
2 eggs
1 c. sugar
3/4 c. butter
1 c. brown rice flour
2 TB potato flour (barley, oat)
2 TB carob powder
2 tsp baking soda
Directions
1. Put chopped dates in a bowl with the boiling water. Set aside and let cool.
2. Cream butter, sugar, and eggs.
3. Add the cooled down dates with water into the butter mixture.
4. Mix in the flours and powders.
5. Bake at 350 F for 40-45 minutes in an 8x8 pan.
